Wash the potatoes, cut them into thin slices with a potato peeler, and dry on paper towels. Heat the oil in a sauté pan and put the sliced potatoes in the hot oil. Brown for 5 min. Set out to dry on a paper towel, and sprinkle with fleur de sel and a few turns of the pepper mill.

Handy tips: homemade Vitelotte potato chips are magnificent, but today you can find them, as well as other types of vegetable chips, at fine foods stores. The gourmet sampler plate can be presented in a plate with four sections, a large plate or separate verrine glasses. The night before serving, prepare the crab, beetroot and grapefruit in aspic verrines (recipe p. 16), as well as the muffins, and keep them in an airtight box. Remember to sprinkle your table with crystallized violets: it’s a beautiful decoration and their flavor is reminiscent of the aromas of Viognier.
